Felt the urge for a Greek inspired dinner tonight. Sure it’s utterly inauthentic but can’t wait to eat it.
Mint and lemon lamb
- Marinate the lamb steaks/escalopes in oil, juice of a lemon, zest and a few crushed cloves of garlic.
- Cook under a smoking hot grill until cooked but still pink.
- Serve with lemon and roast garlic mayo, potatoes and salad as follows.
Best potatoes ever
Roast new potatoes in oil, few cloves of garlic, rosemary, thick slices of one yellow pepper and shallots. Delish.
Chickpea salad
- Combine thinly sliced red pepper, tin of chickpeas, half a chopped cucumber, oil, feta and red wine vinegar.
- Stir in mint leaves and season really well.
